Voluto Coffee

Yet another city often bypassed in my history (mostly during family vacations when I was a wee tot) was the city of Pittsburgh. It's sad (and joyous) to say that my first actual trip just recently happened, as I had a long weekend to spend in town with friends, enjoying some baseball and local sights.

Of course, coffee stops made the list of attractions and there were quite a few. Much like Pittsburgh has been one of the few old industrial cities of the America to really bounce back, it seems their coffee scene has also been atypical in the number of acclaimed coffee places to have emerged.

My first stop was a relative newcomer to the scene called Voluto Coffee. Located in the Friendship area of Pittsburgh, the cafe is part of a residential building, with Voluto trumpeting huge windows and a nice array of modern-esque outside seating. On the other side of the glass, the cafe continues the modern look, with a gorgeous array of furniture in an 'honest architecture' space.

The coffee comes all the way from British Columbia via 49th Parallel. I had myself an espresso (49th's Epic) and a cup from their pump pot (I believe it was french pressed originally) of the 123 degree W Longitude blend. The espresso, pulled short with beautiful crema, displayed notes of vanilla, strawberry, cream, lemon and sugar. The barista did a great job with the extraction and the bright espresso was delightful to slurp. The 123 degree W Longitude blend produced a light, grassy, tart apple coffee with hints of tobacco, orange and honey; a great coffee throughout. The tea was free leaf.

As the first cafe on my expedition, I was greatly pleased with Voluto. Stop in.

Natural Kopi Luwak


Natural kopi luwak is completely untreated kopi, as it is collected with no additional processing. The beans are hand collected from where they lay on the jungle floor, bagged, and then sent to Animalcoffee where they are eventually turned into the world's most exclusive gourmet beverage.
The individual beans are naturally glued together in the stomach of the Luwak, there is no artificial adhesive involved, yet kopi luwak collected in this fashion appears remarkably clean and is completely odour free.
Depending on where the kopi luwak is collected there may be a predominance of either Arabica or Robusta grown which ensures the Luwak Coffee is of a particular type. Alternatively both Arabica and Robusta may be grown within close proximity of each other, as is the practice in some areas of west Sumatra, in which case both kinds of coffee cherry are eaten by the Luwak and the resulting kopi luwak is a blend of coffee created naturally in the stomach of the Luwak.

A bagful of freshly collected kopi luwak in its natural state is brittle and needs to be transported carefully to avoid ending up as individual beans, which are generally unacceptable to Animalcoffee.
To obtain beans while still in this state they must be collected almost immediately after they are deposited on the forest floor. Once they have been exposed to the elements for even a very short period, particularly in the rainy season, they break down into individual beans and we can no longer be sure that they are genuine kopi luwak.

I encountered Hayaki Kopitiam during my Hari Raya Aidilfitri holiday in Kota Bharu Kelantan. It was Friday, we planned to have breakfast at the well known White House Kopitiam, unfortunately it was closed. White House Kopitiam closed every Friday, make sure you remember that!
Since we all are in Kota Bharu town, going back home is not an option, so kena cari jugak a nice place for breakfast. While wondering around, we found Hayaki Kopitiam located at Jalan Kebun Sultan. At that time it was only around 8:30am, memang planned to go out early to avoid the crowd.
Once at Jalan Kebun Sultan, you will definitely see the Hayaki Kopitiam restaurant. There’s two Hayaki Kopitam restaurant facing each other. FREE parking is provided nearby for customers. The restaurant is open 24 hours.

What can you expect from a kopitiam restaurant? the usual breakfast stuff, but here in KB they have additional menu like Nasik Dagang & Nasik Berlauk. I had kopi-0, french toast, egg toast, roti kahwin and nasik lemak. The french toast was delicious!

Italian Coffee

Espresso, caffè normale, cappuccino; sometimes it seems that there are as many types of coffee in Italy as there are pastas. And just like pasta, Italian coffee is an art form with many customs and traditions. How to Enjoy Coffee



Many people ask me how to enjoy a cup of coffee? Basically, the correct way to enjoy coffee is if coffee can be a pleasure for you. The wrong way is if coffee makes you feel uncomfortable. For example, if you need to finish the job all night, drinking coffee will keep you awake. Well, You Need to remember that coffee contains toxins called caffeine. Like drugs, caffeine can be healthful as well as hurt us. Too much caffeine can cause health problems, such as high blood pressure, irritability, and sleep disturbances.

Another mistake is letting your kids drink coffee instead of other nutritious beverages that children need. Caffeine in coffee can be dangerous for children who are still growing. Caffeine can steal calcium from bones, and can make a child's bones become brittle.

This is the recommended way of drinking coffee: Drinking more often in small doses. Simply drink a quarter cup of coffee every hour. If you drink it to prevent drowsiness, this method is more effective than if you drank a large mug.

Rinse the grounds out of your hair (this took awhile for me because my hair is long and it made a big mess in my shower afterwards!) Coffee may add dark highlights to dark colored hair. Blondes may want to stay away from this tip.
Make fertilizer.Place those coffee grounds in a traditional or worm compost bin. Make iced coffee. Freeze leftover coffee into ice cube trays. Then use those coffee cubes to cool down a warm cup of coffee..
As a deodorizer. Dry used coffee grounds on a cookie sheet. Put them into a porous container such as a paper bag (paper wine bags work well for this), a leg of pantyhose, or an empty butter tub with holes poked into the lid. I sometimes use an old room deodorizer container. Place the container in a room, refrigerator/freezer, or even in a musty smelling piece of furniture. As long as the coffee has access to air, it will trap odors and musty smells. For a short-term quick fix, I do the same thing with a freshly empty coffee can or bag in a closed closet.
To repeal garden pests. Spread coffee grounds around anthills to deter ants or mix with orange peels and spread it in a flowerbed to deter cats from using it as a litter box. However, be aware that some pets like to eat coffee grounds and that can cause coffee toxicity. The symptoms in both cats and dogs range from mild hyperexcitablity to the severe such as causing arrhythmias and seizures.
As a pot scrubber. Add a handful of coffee grounds an extra abrasive when cleaning clean stuck on food gunk from the bottom of a cast iron or metal pot or pan. However, this method may stain light color items such as porcelain sinks, pots and pans, or storage containers.

While in the back of the wagon, the owner was preparing our order. After pouring the milk and put an egg (only yellow of course) into a glass, he then added two spoons of sugar, and meraciknya quickly.

With a little hard work, he changed the eggs and sugar into a thick froth of pale yellow color that can be the envy of all the cake makers.

"Starblack" and Kopi Aceh

For exhausted shopaholics, however, there couldn’t be a more ideal pit stop for reasonably priced fare after a shopping marathon.

The Coffee Department explores

Wait, 5th taste?  OK, lets review… there’s sweet, sour, salty and bitter…. and Umami??  What the heck is umami?  If you’re asking yourself that very question, you’re not alone.  For our monthly ‘Taste Personified’ I decided to bring the ubiquitous Mr. Umami to the experts and open up the dialog around what it has to do with coffee!

So, what is it?  In Japanese, umai means delicious, and mi means essence. Loosely translated, umami means ‘brothy’, ‘meaty’, or ‘savory’.  It’s that synergy of flavors that when put together induce the added deliciousness to your tastebuds.  In Japan, many people call any food that reaches a state of perfection ‘umami’.

Umami has been around for thousands of years, but it was first officially discovered in 1908 by Dr. Ikeda, a chemistry professor at the Imperial Tokyo University.  By extracting glutamate from Kombu, (a brown algae and base for Dashi – Japanese fish stock) and pondering the unique flavor profile of the savory soup, he found that umami is actually a taste.  In the year 2000, another team of umami researchers found the actual taste bud, or taste receptor; ‘taste-mGluR4’ which when combined with umami rich foods defined it’s fate in our stimulated senses .  The concept of having a 5th taste was only introduced to the western world about 30 years ago, and the first book published about umami in the United States was in 2005!

As a self-professed coffee enthusiast (okay, coffee geek), I’m looking for coffees that wow me. The perfect coffee has a great story – but let’s face it, it must taste great too!
The coffee “challenge” in my house is that I drink my coffee black and my wife drinks hers with cream and sugar. Though there are many coffees that work for both of us, it is rare when one coffee hits the jackpot – meaning we both love it prepared our way.

Kopi Tubruk – Mud Coffee
